I spent a bit of time thinking about how you might model it in a way that can encompass such things as "1 cup flour", "3 cloves garlic", "pinch of salt", and "12 eggs" with equal ease.

Coriander is both an herb (the leaves) and a spice (the seeds). It ideally should have both types. What higher types would herbs and spices go under then perhaps ? Ingredient Type isn't created yet, but should it be ? I don't think so, since many raw foods are ingredients. And Ingredients are just items, really, with no Heirarchy. Foods really need to be classified by their use ideally. So my vote is to give Coriander both a Herb Type and Spice Type separately, since their are many plant parts that are used this way, such as Mustard and others. Further discussions follow in the Herb Type.
